Rotel Dip with Velveeta & a Twist


Hey, y'all!! Glad you're here! So, did you know that I am a total snack addict! I love finger foods, appetizers, small plates, dips, chips, cheese balls...ALL THE THINGS. Crock pot dips are so hostess friendly. You don't have to worry about keeping your appetizers warm. Use a crock pot liner and it's easy clean up. That's a win for anyone, right?


I have no idea came up with the original Velveeta and Ro*Tel queso, but thank you from the bottom of my stomach. And it is so easy!! Those two ingredients alone make a wonderful addition to any party or just a Saturday afternoon. Admittedly, sometimes I am a little "extra." So, I wanted to make the two ingredient dip a little "extra" also while keeping it simple and using pretty basic pantry items. Add pork sausage, cream cheese and a dash or two of hot sauce and VOILA! Velveeta-Ro*tel dip with a twist. Let's make it now!!


Here's what we need:

1 lb of pork sausage. I prefer Jimmy Dean Hot. You use your favorite.

1 8 oz. package cream cheese, cubed

1 16 oz. package of Velveeta, cubed

1 can Ro*Tel diced tomatoes - flavor of your choice - I use the original.

Hot sauce of your choice

1 tablespoon onion powder

First, brown your sausage working it in a skillet over medium high heat until browned and crumbled. I have this handy little tool from Pampered Chef that I love to use when cooking sausage or ground beef. I have seen similar ones at Wal-Mart also. If you don't have one, I highly recommend getting one. They are not super expensive and are super handy to have around.

Drain the sausage and set aside. I like to bring my dip together in a pot on the stove and then transfer to a crockpot to keep warm freeing me up to focus on my guests or a good episode of Yellowstone or Virgin River. What's your favorite binge-worthy show these days? Next, add the cubed Velveeta, cream cheese and Ro*Tel to a pot over low heat. Add the tablespoon of onion powder and however many dashes you prefer of your favorite hot sauce. I am seriously crushing on Texas Pete Hotter these days. And I prefer several dashes. Stir well to combine. Let the Velveeta and cream cheese melt over several minutes, stirring often.

Add in the drained, crumbled sausage and stir to incorporate into that cheesy lusciousness. I can taste it now. Get in my belly!


When smooth and creamy, transfer to a crock pot on low. I love to use crock pot liners. Keep an eye on the heat on the crock pot, you may want to turn to low after the crock pot is heated up for awhile. That is, if the dip lasts that long. Serve with your favorite dipping vessel. My personal choice is Fritos Scoops! Delish!!!


Here are a few notes and possible variations for this delish dip.

* If there are any leftover, store in airtight container in the fridge. Reheat in microwave, stirring often. Add a splash of milk if it needs to be thinned. Discard after 3 days.

* If you would like a little extra kick or extra crunch - add some diced jalapenos or red or green onions. Add a handful of frozen corn kernels.

* If you prefer the flavor of Italian sausage, feel free to change that up.
