Hey, Y'all! Let's talk comfort food! What's your favorite comfort food? My all time favorite is mashed potatoes with LOTS of butter. And what goes super well with mashed potatoes? Meatloaf! For sure! Have you ever thought about where meatloaf came from? Meatloaf has always been a regular my supper rotation. It is said that during the Great Depression, meatloaf evolved as a way to stretch the food budget by using an inexpensive type of meat, bread or saltines and combining it with leftover ingredients and spices. Well, I for one, am glad that someone back then taught my Grandma Cupp how to make meatloaf. Here is my version of her meatloaf recipe and it is Easy Peasy. Here's what you will need to make this for supper tonight.
Easy Peasy Meatloaf
Ingredients:
1 1/2 pounds ground beef
2 eggs, lightly beaten
1 medium onion, chopped
1 medium bell pepper, diced
1 cup milk
1 cup dried breadcrumbs
1/3 cup ketchup
salt and pepper to taste
For the sauce:
2 tablespoons dark brown sugar
2 tablespoons yellow mustard
1/3 cup ketchup
1 tbsp. Worcestershire sauce
Directions:
Preheat oven to 350 degrees F.
Preheat a skillet over medium heat, add cooking spray or olive oil to the pan and "sweat" your peppers and onions to tenderize them. They don't have to be cooked all the way and definitely not browned. When they start to get tender and translucent remove from the skillet on a plate to cool before adding to the ground beef mixture.
In a large bowl, combine the ground beef, beaten eggs, milk, ketchup and breadcrumbs.
Season with salt and pepper to taste. The milk will help to keep your meatloaf moist and the breadcrumbs and eggs will help bind it together. Fold in your cooled peppers and onions. Be careful not to overmix your meatloaf mixture as that can cause it to be tough. Lightly grease your loaf pan(s) and line them with parchment paper.
If you prefer, you can form the mixture into a loaf and place in a lightly greased and lined 9x13 inch baking dish. Sometimes I do that but, today I divided the mixture between 2 loaf pans.
If you know me at all, you know that I am ALL about the SAUCE!! Let's whip up a super quick sauce for this meatloaf. In a separate small bowl, combine the dark brown sugar, mustard, Worcestershire sauce and ketchup. Mix well and spread over the meatloaf or meatloaves. I like to reserve about 1/3 to glaze meatloaf right before serving.
Bake at 350 degrees F for approximately 1 hour. Then enjoy with some mashed potatoes and peas. And definitely a nice yeast roll or fresh cornbread! You're gonna love it!
